Our first stop in this weeks installment of Sky Dives was at Charlie Parkers. This restaurant looks from the outside like a perfect Sky Dives kinda place. You need more than a GPS to find it, but once youre on the right street, you cant miss it. The restaurant is housed in a Quonset hut. Only recently has this place been refurbished in a more contrived 1950s- look. We kind of wish that it had been left the way it was! Either way, the food is hearty, middle-American and good.
We came here for the Horseshoe and a HUGE pancake. Springfield is known for the Horeshoe, which is a pile of stuff on a plate that includes: two pieces of Texas toast (thick sliced bread, lightly toasted), 2 hamburger patties (cooked to preference, usually medium), a mound of hash browns and a blanket of either gravy or cheese sauce.
The pancake is served on a pizza platter and we cut it like a pizza to share it!
The owner, Mike Murphy, wandered around the U.S. in the Military and in the restaurant business before returning to Springfield to purchase the restaurant. Regular customers and the former owners still eat here, so Murphy must be doing it right! From the taste of the food, we think he is.
Sky Dives trips are interesting in that our crew of four spans different generations. Sometimes we are surprised to learn things and other times we realize that what is familiar to our own generation is not known by others. Take for example, the Quonset hut.
