This refreshing salad is a great way to start a long meal. Serve with fresh challah bread to soak up the sauce. Sumac is a wonderful lemony-tasting spice that can be found in stores that sell Middle Eastern, Israeli or Persian foods.
• 2 ripe tomatoes, cut in large chunks
• 1 / 2 red onion, minced
• 1 green bell pepper, cored, seeded chopped
• 1 yellow bell pepper, cored, seeded and chopped
• 1 / 2 large English cucumber, cut into 1 / 2-inch-thick slices
• Juice of 1 lemon
• 1 tablespoon honey
• 3 tablespoons olive oil
• 1 teaspoon sumac, optional but very good
Combine all the ingredients well in a large mixing bowl. Toss and serve. Makes 6 to 8 servings.
