1/3 cup gumbo file
1 large onion, chopped
6 green onions, chopped
3 stalks celery, chopped
1/3 cup plus 1 tablespoon Bayou Magic Cajun Seasoning, divided
2 tablespoons chopped garlic
1 1/2 tablespoons Old Bay Seasoning, divided
1/4 cup chopped parsley
1/4 pound piece smoked turkey ham, cut into 1/2 -inch dice
4 cups chicken stock
2 tablespoons vegetable oil
1 pound boneless, skinless chicken thighs (about 4) cut into 1-inch pieces
